Encapsulation of probiotics help to improve the survival rate of the microorganisms during intestinal transit. This study showed that encapsulation with mastic gum favoured the viability of probiotics during refrigerated storage while positive antimicrobial properties further extended the shelf-life of the products. Hence, mastic gum could be a promising approach to deliver probiotics in functional fermented milk product.
